Crispy Homemade Fries Recipe

Ingredients

  • 4 large potatoes (Russet works best)
  • 4 cups cold water
  • 3 tablespoons cornstarch (optional, for extra crispiness)

  • Cooking oil (vegetable, canola, or peanut oil)

Instructions

1. Prep the Potatoes

Peel the potatoes (if you prefer skinless fries) and cut them into even sticks. Aim for about ¼-inch thickness so they cook evenly.

2. Soak in Water

Place the cut potatoes in cold water for at least 30 minutes (or overnight in the fridge). This step removes excess starch, which helps prevent soggy fries.

3. Dry and Coat

Drain the potatoes and pat them completely dry with a towel. Toss them lightly in cornstarch for that extra crunch factor.

4. First Fry (Low Heat)

Heat oil to about 325°F (165°C). Fry the potatoes in small batches for 3–4 minutes until they’re pale and soft but not browned. Remove and drain on paper towels.
